Potato Broccoli Tater Tots

Yield 36 to 40 tots

Ingredients

Tater Tots

  • 2 medium sized Potatos, peeled and cubed
  • 1 head of Broccoli, roughly chopped
  • 1 teaspoon of Garlic Powder
  • 1 teaspoon of Onion Powder
  • ½ teaspoon of dried Parsley
  • ½ teaspoon of dried Oregano
  • ½ teaspoon of dried Basil
  • Sea Salt and Freshly Cracked Pepper

Tomato Based Dipping Sauce

  • 3 oz. (½ a can) of Tomato Paste
  • 1 tablespoon of Maple Syrup
  • ¼ teaspoon of Garlic Powder
  • ¼ teaspoon of Onion Powder
  • Sea Salt
  • 2 tablespoons of Water

Cheese Dipping Sauce

  • ½ cup of Raw Cashews, soaked overnight or in warm water for 2 hours
  • 1 medium sized Carrot, roughly chopped and steamed
  • 1 small potato, roughly chopped and steamed
  • 1 tablespoon of Lemon Juice
  • 2 cloves of Garlic
  • 1 large pitted Date
  • ¼ cup of unsweetened Almond or Cashew Milk
  • Sea salt

Instructions

Tater Tots

  1. Chop the potatoes into large chunks. Cut the broccoli head into large florets.
  2. Steam the potatoes and the broccoli for 10 minutes on a stove top steamer. They should still befirm.
  3. In the food processor, combine the potatoes, broccoli, garlic powder, onion powder, driedparsley, oregano, basil and salt and pepper.
  4. Pulse 2 to 3 times till it is ‘riced’. Make sure that it does not turn into a mush.
  5. Preheat the oven to 400F. Line a baking sheet with parchment paper
  6. Taking a tablespoon measure, scoop out the potato-broccoli mix and shape it into a cylindrical’tater tots’ shape. It should yield about 36 to 40 tater tots.
  7. Bake for 40 minutes at a 400 F oven, turning the tots after 20 minutes.
  8. Serve hot with dipping sauce.

Tomato Based Dipping Sauce

  1. In a bowl combine the tomato paste, maple syrup, garlic and onion powder and salt. Whisk till smooth.
  2. Gradually add water to while whisking to get to the right consistency.

Cheese Dipping Sauce

  1. In a hi-speed blender or food processor, combine the steamed potato, carrots, soaked and drained cashew, lemon juice, garlic, pitted date, sea salt and pepper.
  2. Add half of the milk and blend/process till smooth. You would need to pause and scrape down the sides.
  3. Keep adding more milk gradually till it becomes a thick smooth sauce.
